Dinner Idea: Crockpot Hungarian Goulash

As the winter weather sets in, we always make a pot of Goulash. It is an easy crockpot meal that warms up the house with its delicious smells. It only takes about 4 hours in the crockpot, but if you are pressed for time, you can also make this on the stove. I usually make this for dinner on busy nights because outside of cutting up the vegetables, it cooks itself.

Ingredients:

3 lbs. of beef stew meat, cut into bite sized cubes
2 green peppers chopped, but not too small
1 medium onion chopped
5 medium potatoes, cut into bite sized pieces
3 oz. of tomato paste (1/2 a can)
garlic to taste (I used 3 cloves)
1 cup of beef broth
1 cup of white wine

Cut up all the ingredients and add to the crockpot. Season with salt and pepper to taste. Mix up the pot so the food is evenly distributed throughout the crockpot. Cover and turn on high to cook for 4 hours.

Stovetop directions: Brown meat, onions, peppers and garlic in skillet for 5-7 minutes. In the meantime, add wine, broth and tomato paste to a large pot and turn on medium heat. Add meat and vegetables and uncut cubed potatoes. Cook until potatoes reach desired doneness – about 25 minutes.

Serve with hearty bread. Enjoy!
